Freddie is one of those individuals who can open a pantry or refrigerator, gaze at its contents for a while, and concoct a scrumptious meal using whatever he discovers. Are you like that? It never fails to amaze me, and I enjoy sitting at the counter, working on the New Yorker crossword, and observing him work his magic.

This summer, one of the dishes he prepared was pasta with tomato sauce, a fresh salad, and baked shrimp. Several readers inquired about the shrimp, so I reached out to Freddie this morning, and he shared the process with me. Here it is:

“My father is an excellent chef, and one lesson I’ve gained from him is how to create multiple courses at home and make it feel special. In our Italian-American household, macaroni is invariably included in the meal, always paired with a homemade sauce — it’s a source of pride. (No matter the type of noodle — typically penne or ziti — we refer to it as ‘macaroni.’) For this particular dinner, I aimed to keep things simple so I could spend time with my parents and Joanna. Easily popping a large tray of shrimp into the oven was a great way to achieve that.”

You’ll require:
pack of frozen, pre-cooked shrimp
flour
salt
pepper
eggs
panko bread crumbs
spices, such as paprika, garlic powder, onion powder (optional)
olive oil
a lemon

Non-recipe recipe:

Preheat the oven to 350F. Thaw the shrimp. Remove the tails (if they still have tails) and pat them dry.

Prepare your standard three plates: flour (you can season the flour with salt and pepper if you wish; Gordon Ramsay often seasons every layer with salt and pepper; though it seems trivial, it significantly enhances the final dish), egg wash, and panko bread crumbs (seasoned, if desired, with paprika, garlic powder, onion powder, salt, and pepper). Gently coat each shrimp in flour, then egg; then press the shrimp into the panko.

Cover a baking sheet with tin foil and drizzle a thin layer of olive oil over the foil. Place the shrimp in a single layer on the foil. Next, drizzle a bit of oil over the shrimp.

Cook in the oven for 10-15 minutes. Before serving, drizzle lemon juice over the shrimp.

Pair with pasta and tomato sauce and green salad if you prefer. You can enjoy the shrimp with the pasta or on its own — breaded shrimp and red sauce can be absolutely delicious. Enjoy!
