I enjoy preparing dishes that everyone savors — meals that make the entire table fall silent at the first taste. But do you know what I almost adore even more? Crafting food that causes the whole table to exclaim with delight like kids chasing an ice-cream truck.

Thus, when I stumbled across a “secret Jell-O” formula in chef Hillary Sterling’s latest cookbook, Ammazza! — named after the Roman slang expression, which loosely means “wowee!” — I felt compelled to share it.

“This was the ultimate treat of my childhood,” notes Hillary. While growing up, her Grandma Anne always had a bowl of Jell-O in the fridge. “She included halved grapes, and they’d suspend in the middle as it ‘jellified.’ The taste was incredibly refreshing and delightful.” As adults, Hillary and her sister attempted to recreate it, but never quite captured the original flavor. Serves 4

1/2 cup (115 g) prunes*
3/4 cup (180 ml) brandy
1 85-gram package cherry gelatin

*Indeed, prunes are dried plums. Here, they’re essentially rehydrated during cooking.

In a small pot, combine the prunes and 1/2 cup (120 ml) of the brandy. Bring to a boil, then lower the heat, cooking until the prunes soak up all the liquid (around 5 minutes). Set aside. In a separate small saucepan, bring 1 cup (240 ml) of water to a boil. Put the gelatin in a heatproof bowl, then pour the hot water over it, whisking until fully dissolved (approximately 2 minutes). Stir in the remaining 1/4 cup (60 ml) of brandy and 1 cup (240 ml) of cold water.

Evenly distribute half of the gelatin mixture among four glasses, filling them about halfway. (“Now is the moment to use your heirloom wine glasses or champagne coupes,” says Hillary. “Style and presentation were everything to my grandmother.”) Place the glasses on a small sheet pan for steadiness. Refrigerate, uncovered, until just set (about 1 hour).

Finally, equally divide the soaked prunes among the glasses, gently placing them atop the set layer. Top each glass with the remaining gelatin — the fruit will “float” as it sets. Cover and chill until firm but still jiggly (about 1 hour more). Serve, and enjoy!
